DIY Mayonnaise- HELLO EASY MAYO!

Making mayonnaise at home can be a fun and rewarding experience. Here's a simple recipe for DIY mayonnaise:

Ingredients:
- 1 egg yolk
- 1 teaspoon dijon mustard
- 1 cup vegetable oil or light olive oil
- 1 tablespoon lemon juice or vinegar
- Salt and pepper to taste

Instructions:
1. In a medium-sized bowl, whisk together the egg yolk and dijon mustard until well combined.

2. Gradually add the oil, drop by drop at the beginning, while continuously whisking. As the mixture starts to emulsify and thicken, you can slowly pour the oil in a steady stream while whisking vigorously.

3. Continue whisking until all the oil is incorporated and you have a thick, creamy consistency.

4. Stir in the lemon juice or vinegar. This helps to balance the flavors and adds a tangy taste.

5. Season with salt and pepper to taste.

6. Once done, transfer the homemade mayonnaise to a clean, airtight container and store it in the refrigerator. It can be kept for up to a week.

Tips:
- Make sure all the ingredients are at room temperature to help in achieving a better emulsion.
- Whisking constantly and slowly incorporating the oil are keys to successful mayonnaise making.
- If the mixture starts looking too thick or separates, you can add a few drops of water and continue whisking to bring it back to a creamy consistency.
