Avocado Boat Recipe- Vegan Approved! Add Chicken or Tuna for you meat lovers out there!

Avocado boats are a delicious and healthy way to enjoy the creamy goodness of avocados. Here's a simple and versatile avocado boat recipe that you can customize with your favorite fillings:

Ingredients:
- 2 ripe avocados
- ½ cup diced tomatoes
- ½ cup diced cucumber
- ½ cup diced bell peppers (any color)
- ¼ cup diced red onion
- ¼ cup chopped fresh cilantro or parsley
- Juice of 1 lime
- Salt and pepper to taste
- Optional toppings: crumbled feta cheese, cooked quinoa, grilled chicken, tuna or black beans

Instructions:
1. Cut the avocados in half and remove the pit. Scoop out a little bit of flesh from each avocado half to create a well for the filling, leaving a border of avocado around the edges.
2. In a mixing bowl, combine the diced tomatoes, cucumber, bell peppers, red onion, cilantro or parsley, lime juice, salt, and pepper. Toss everything together until well combined.
3. Spoon the filling mixture into the hollowed-out avocado halves, pressing gently to fill in the well.
4. Optional: If desired, sprinkle your choice of toppings over the filled avocado boats, such as crumbled feta cheese, cooked quinoa, grilled chicken, or black beans.
5. Serve the avocado boats immediately as a light meal or appetizer. They can also be refrigerated for a short time before serving if needed.

You can get creative with the fillings by adding other vegetables, protein sources, or seasonings based on your preferences.
